ASSORTED FRUIT POPSICLES

 

We were fortunate to have an abundance of fresh fruit when my kids were growing up...so I made extra for the freezer.  There’s nothing like admiring a newly made snowman when your lips are stuck to a peach popsicle!  ~Sandy

 

HELPFUL HINTS:

It helps to have several popsicle molds on hand, along with a big box of popsicle sticks.  I placed each popsicle in a sandwich bag, then placed those into a large freezer bag to keep them extra fresh in the freezer. I added “Fruit Fresh” , available at the grocery store, to the mixture to keep the fruit from turning brown.

 

You can mix/match fruit...depending on what is available, and according to your taste.  Always clean the fruit, then peel and remove the pit.   Add sugar to taste.  Fill molds, leaving a small space at the top. Insert popsicle stick and freeze for a few hours.  Run cool water over the bottom of the mold to loosen the popsicles. Wrap each one separately, place back in freezer.

 

A few of Sandy’s “recipes”:

  

 FRUITY YOGURT POPS

1 cup mashed fruit (bananas, berries or peaches work well)

2  cups plain or vanilla yogurt

½ cup orange or apple juice

 

Blend, pour into molds and freeze.

 

 

PEACH PIE POPSICLE

 

Puree Peaches, add sugar and cinnamon to taste.  Pour mixture into molds, freeze. 

 

 

STRAWBERRY-BANANA CREAMSICLES

 

1 cup  bananas

1 cup strawberries

14 oz. evaporated milk

 

Blend all….pour into molds. Freeze

 

 

HONEYDEW LIME POPSICLES

 

1/4 cup superfine or regular granulated sugar
1/4 cup water
1 (3 1/2-lb) ripe honeydew melon, peeled, seeded, and cut into 1/2-inch pieces (4 cups)
2/3 cup fresh lime juice

Dissolve sugar in water by stirring if using superfine or by heating in a small heavy saucepan if using regular granulated (then cool).

Blend half of melon and half of lime juice in a blender until smooth. Add syrup and remaining melon and lime juice and purée until smooth. Force purée through a fine-mesh sieve into a 2-quart glass measure or bowl, pressing on solids and then discarding them.

Pour mixture into molds and freeze until slushy, about 2 hours.

Insert sticks, then freeze Popsicles until completely hardened, at least 6 hours.

  Note:
Honeydew Lime Popsicles can be made 2 days ahead (flavor diminishes if made any earlier).  These are NOT meant  to be frozen for more than 2 days.
