Spring Cleaning Fruit Bar Cookies

 Other than the butter and egg, you’ll probably find this stuff in your pantry during Spring Cleaning.                                    Bake a batch to munch on.

Ingredients

· 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan

· 1/2 cup packed light-brown sugar

· 1/4 cup sugar

· 1 large egg yolk

· 1 1/2 cups all-purpose flour

· 1/2 teaspoon ground cinnamon

· 1/4 teaspoon salt

· 1/4 teaspoon baking powder

· 3/4 cup sliced almonds

· 1/2 cup fruit jam, such as cherry, plum, or raspberry

Directions

1. Preheat oven to 350 degrees. Butter an 8-by-8-inch baking dish or pan. Using an electric mixer, beat butter and sugars until light; beat in yolk. In a small bowl, whisk together flour, cinnamon, salt, and baking powder; gradually mix into butter mixture, then fold in almonds until combined (mixture will be quite crumbly).

2. In a small bowl, whisk jam to loosen. Gently press half of dough into bottom of prepared pan. With the back of a spoon, gently spread jam over dough, leaving a 1/4-inch perimeter. Scatter remaining dough on top (to edges) and press gently. Bake until golden, 25 to 30 minutes; cool completely in pan. Remove from pan, and use a serrated knife to cut into bars or squares.

Makes 16 to 18 bars
